Excellence begins in our vineyards, located in the fertile lands of La Mancha. We select grape varieties especially suitable for juice, cultivated under sustainable and environmentally friendly practices. Each vine is carefully tended throughout the year—from pruning to ripening—ensuring healthy and well-balanced grapes.
We harvest at the optimum point of ripeness, when the grape offers its highest level of natural sugars and aromas. Depending on the vineyard, the harvest may be manual or mechanized, always carried out swiftly and precisely to avoid oxidation or premature fermentation.
Once at our facilities, the grapes undergo a process of selection and washing. They are then pressed to extract the must, which is immediately clarified and stabilized to preserve its freshness. The entire process takes place in a controlled atmosphere to ensure that the natural properties remain intact.
The fresh must is kept in stainless steel tanks at controlled temperatures. These conditions guarantee that the juice maintains its organoleptic qualities—aroma, color, and flavor—until its next stage of processing.
Depending on the product’s destination, the juice may undergo a concentration process. Part of the water is removed through vacuum evaporation, resulting in natural grape concentrate, ideal for export or customized blends.
We have modern and versatile bottling lines that allow us to adapt to different formats: from industrial containers to ready-to-consume presentations. All processes are carried out under aseptic conditions, ensuring safety and product durability.
Both natural juice and concentrate are stored under optimal conditions, protected from light, oxygen, and temperature fluctuations. In this way, we guarantee their integrity until packaging or dispatch.
At every stage of the process, our laboratory technicians perform physical, chemical, and microbiological analyses to ensure food safety and product quality. We apply international standards (HACCP, ISO, etc.) and follow strict traceability protocols from the vineyard to the final product.
